Healthy Egg Recipe


Veggie Eggs

Ingredients:
• 2 TBL ghee (clarified butter)
• 1 cup onion, chopped fine
• 4 cloves garlic scapes, diced
• 1 cup zucchini, diced
• 1 cup red bell pepper, diced
• 2 cups finely chopped kale
• 1 cup chopped fresh tomato
• 4 eggs
• 1/4 tsp turmeric
• salt and white pepper to taste
• 1 sprig chopped fresh parsley
• 1 sprig chopped fresh rosemary •    1 leaf chopped fresh basil

Directions:
1.    Sauté all the vegetables for about 5 minutes
2.    Add the eggs and herbs
3.    Cook over medium heat for about 12 minutes
